Pyrenees Capers and Caper Berries Capers and Caper Berries have been preserved using the minimum amount of salt required for flavour development and stability.
Capers and Caper Berries contain many compounds that are vital for good health, including significant amounts of anti-oxidants, such as Rutin and anti-cancer agents, such as isothiocyanates.
These compounds are protected by the gentle preservation techniques used in the production of Pyrenees Gourmet Capers and Caper Berries
The little white dots that appear on the Pyrenees Gourmet Capers and Caper Berries, which might be mistaken for penicillin mould, are in fact the ant-oxidant, Rutin, showing up as small white crystals on the surface.
This feature is often absent from imported products, due to more severe processing techniques, making locally produced a healthier choice.

Gwynnyth Vineyard in Moonambel is the only supplier of locally grown capers in the Pyrenees.
We have compiled a small recipe booklet, specially adapted to suit the special qualities of both the Moonambel Gap Olive Oil and the Pyrenees Caper Products.

Our capers are grown in the little village of Bealiba, near Maryborough in the Pyrenees Region of Western Victoria by Cooper Capers.
To have been a great success at the Warrenmang Resort Restaurant and also at the Moonambel Worlds Longest Lunch in 2011.
They are now highly sought after by selected restaurants in the Melbourne area.
