We aim to produce wines that are elegantly flavoursome, rather than bold and overripe.
We try to keep the alcohol content of our table wines down to below 13%, because we believe they then show their true varietal characters .
It also allows the consumption of a couple of glasses of wine with a meal, without falling over.
Even our Desert Plum Wine has an alcohol level below 17%.
Both our white wines and red wines our renowned for their longevity.
With age, they develop delicious aged complexity and mouth-feel, with our 1993 and 1994 Cabernets still quite splendid and our 2008 Chenin Blanc just beginning to show its true splendour.
Made from tree-ripened Pink Lady apples this wine is bottle fermented and aged on yeast lees.
The wine opens with a lively persistent mousse and intense apple flavours waft out of the glass.
The apple flavour is joined by fresh-bread yeast characters on the palate.
The residual sugar is complemented by a lively acid finish giving the drinker an experience of a
traditional European style Cider.

This wine is the same as above, but ageing on lees and somewhat drier, having had no liqueur added.
It is presented under a tirage crown seal and a gold foil hood.

The 2010 still displays green tinges, as well as some yellow notes from its oak treatment and
age.
The nose shows an intense tropical fruit, complexed with oak vanillin notes and some mineral
aged characters.
The palate shows smooth creamy oak flavours and a generous mouth-feel, followed by a lively
fresh acid finish.
This wine still has the potential to be aged for two or three more years to develop even more complexity, but makes for quite lovely drinking right now.

It has intense black-currant characters on the nose, together with sweet vanillin oak.
The intense fruit persists on the palate, followed by a clean, fine tannin and acid finish.
This wine is designed to accompany roast meats and sharp cheeses.

This wine displays a medium brick-red colour with a just a touch of brown showing in the edge of the glass.
All these flavours again feature on the palate, which the fruit complexed with toasty French oak
and a lingering soft finish of oak ands fruit tannins and fruit acid.
The 1999 Cabernet shows a slightly darker brick red/purple colour, with very little browning at this
stage.
It retains lovely intense fruit flavours, with blackberry and black-currant most evident.
The palate shows outstanding fruit notes and a long smooth mouth-feel, while finishing with a firm
tannic grip.
This wine has the fruit intensity and structure to reward cellaring for a few years yet,
unless you are a lover of big finishing wines.
It will cellar well and be at its best in 2013.

Our Tawny Plum Port is a blend of plum wines ranging in age from 30 to 3 years old.
The wine is produced by a syruped fermentation of Beauty plums, a soft-fleshed variety, grown in
our small orchard at Gwynnyth Vineyard.
A long fermentation leaves it with about 16% alcohol and some considerable residual sugar.
The wine exhibits plummy fruit characters, as well as, complex lifted rancio aged flavours.
The wine is sterile filtered into 375 mL bottles and ready to drink now, and will stay balanced in the bottle for about one year.

A small parcel of Sauvignon Blanc, heavily affected by Noble Rot was sourced from a nearby Moonambel vineyard.
Picked at 16.5 Be neutral fortifying spirit was added soon after fermentation started to retain considerable natural sweetness.
The wine has a viscous texture, a golden colour and smells of old-fashioned roses and spicy muscat. Both on the palate and on the nose the wine shows the typical botrytis orange peel character and finishes with a fresh acid. At this stage the spirit as slightly dominant, but is rapidly integrating into the luscious palate. Drink now till forever?
